The ‘Paradise Under The Stars’ Menu de Luxe is Executive Chef Ash Clarke’s kaleidoscopic journey through the world of 1950s Cuba.
Taken from the finest menus of the day—at legendary venues like Sans Souci, Monsignor, and the Tropicana itself—it transports diners into a world where European finesse, American brash, and classic Cuban soul all collide on the streets of mid-century Havana.
Vintage fine dining meets vibrant street food. Timeless recipes, theatrical storytelling, all come together to a thrilling tribute to the city known as ‘The Pearl Of The Caribbean’.
The Club bar serves a range of tropical and Cuban cocktails, drawn from the pages of 1950s cocktail manuals - drinks that would have been served in the original Tropicana club and drunk by celebrity locals like Ernest Hemingway.
