The ‘Paradise Under The Stars’ Menu de Luxe is Chef Ash Clarke’s kaleidoscopic journey through 1950s Cuba.
El cubano sandwiches, cheese filled croquetas, roast pork served two ways, lechon asado style. Tostones, yuca, vibrant mojo sauce, tropical salsas. Then to finish, churros 'Tropicana' style - with rich dark chocolate, mint and mango.
Each dish is taken from the finest banqueting menus of the day—at legendary venues like Sans Souci, Monsignor, and the Tropicana itself—transporting diners into a world where European finesse, American brash, and classic Cuban soul collide on the streets of mid-century Havana.
